Ondeh-ondeh, A Local Delicacy
One of my favourite tea time snacks is the ondeh-ondeh (pronounced as own-day, own-day). It's usually made with glutinous rice flour but the recipe below is a variation, using sweet potato. Disclaimer: The recipe is just an estimation of what I used, so it may need some trial and error to see what works for you.Ingredients500g sweet potato200-300g flour, sifted with a pinch of salt200g palm sugar, chopped into cubes200-300g grated coconut, mixed with a little saltgreen food dye, a few drops or so in some waterBoil the sweet potatoes until it's soft and tender. Peel and mash it in a bowl. Knead in the flour and the green dye a little at a time until the sweet potato/flour mixture is stiff enough to make into little balls, slightly smaller than a fifty cent coin. The mixture may still be a little sticky but that's okay because if you add in too much flour, it'll be too hard and that wouldn't be that nice.Flatten the balls out in your palm and place a cube of the palm sugar into the centre before rolling it up
